Easter is the perfect excuse to get together with friends and family, eat delicious food, and celebrate all things spring. With the weather warming up and fresh ingredients popping up everywhere, I wanted to try something a little different for this year’s gathering. Enter: quiche. But not just any quiche is fresh, flavorful, and just what you need to welcome the season.

I found this amazing recipe from Brooklyn Supper, and it’s now my go-to for Easter brunch or any spring get-together. It’s simple, it looks impressive, and trust me, it tastes like a little bite of heaven.

Quiche is that perfect unfussy dish you can make ahead of time and serve without the usual brunch stress. You can enjoy it warm or at room temp, so it’s totally flexible when you’re entertaining. Plus, this particular one uses fresh spring ingredients like spinach, leeks, and spring onions, which make it feel light and seasonal. I love how the puff pastry crust adds that flaky, buttery touch—it's like a little piece of spring on your plate. Even my six year old wanted to try a piece. 


Sheet Pan Spinach Quiche with Spring Alliums Recipe

Here’s the recipe straight from Brooklyn Supper (with a few of my own twists).

Ingredients:

For the crust:

1 sheet of refrigerated puff pastry (you can also use a homemade pie crust if you’re feeling fancy). I made my own crust and even though it was labor intensive, it was DELICIOUS. 

For the filling:

1 tbsp olive oil

1 bunch spring onions, sliced thin

1 leek, cleaned and sliced thin

2 cups spinach, chopped

4 large eggs

1 ½ cups heavy cream

1 tsp salt

½ tsp black pepper

½ cup grated Parmesan

½ cup crumbled feta (optional, but so worth it for that creamy goodness)


Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper, then roll out your puff pastry to fit the sheet. Gently press it into place so the edges are slightly raised—this will help form the crust.

  2. Cook the veggies: Heat the olive oil in a skillet over medium heat. Add the spring onions and leek, cooking them until soft (about 5 minutes). Then, toss in the spinach and cook for another 1-2 minutes until it’s wilted. Remove from heat and set aside.

  3. Make the egg mix: In a bowl, whisk together the eggs, heavy cream, salt, and pepper. Add in the cooked veggies, then fold in the Parmesan and feta (if using) for that extra richness.

  4. Assemble the quiche: Pour the egg mixture into the puff pastry crust, spreading it out evenly with a spatula.

  5. Bake it up: Pop the quiche into the oven and bake for 25-30 minutes, or until the filling is set and the top is lightly golden.

  6. Serve and enjoy: Let the quiche cool for about 5 minutes before slicing it up. Serve it with a fresh salad or some roasted potatoes for the ultimate Easter spread.

Tips for a Stress-Free Easter Gathering

  • Make ahead: This quiche is perfect for prepping the day before. Just pop it in the fridge overnight, and when you're ready to serve, give it a quick reheat in the oven.
