Tucked into the heart of San Francisco’s Hayes Valley, Absinthe Brasserie & Bar has long been a staple of the city’s cocktail scene. Known for its classic French influences and inventive seasonal drinks, Absinthe is the kind of place where every detail feels intentional - especially at the bar.

We recently caught up with Eric Stashak, Absinthe’s Beverage Director, to talk cocktails, creativity, and the magic of vintage glassware.

“I’m a big fan of vintage glassware,” Eric told us. “Having a variety behind the bar allows me some freedom and creativity in deciding what glass goes best with what drink.”

That sense of playfulness and intentionality comes through in every pour. Eric offered us a peek into his cocktail lineup - and the vintage vessels he’d pair them with.

The Bijou
Gin, Green Chartreuse, Sweet Vermouth
French for “jewel,” this strong and aromatic classic would shine in a cut crystal wine glass, adding elegance and a little sparkle to its rich, herbaceous hue.

The Red Swan
Whiskey, Thai Tea syrup, Lemon, Pandan liqueur, Black Pepper
Eric’s personal favorite on the seasonal menu, the Red Swan is bold, warming, and layered - a perfect fit for our cut glass ice bucket.

Mezcal Cocktail
Mezcal, Criollo de Oaxaca liqueur
Rich, spiced, and just a touch sweet, this smoky sipper belongs in a vintage coupe, where the curves of the glass complement the cocktail’s earthy complexity.

French 75
Gin, Lemon, Sugar, Sparkling Wine
The bubbly, citrusy staple finds a fresh look in one of our vintage flute glasses, elevating this classic to special-occasion status - even if the occasion is just Thursday night.

St. George Chile Vodka, Blueberries, Dolin Blanc, Lemon Shiso syrup, Sparkling Yuzu Soda
Bright, refreshing, and just the right amount of unexpected, the Blue Notes was made for a tall crystal vintage glass - something with presence and a hint of whimsy.
